During the Honey process, the coffee mucilage is left on the bean and not washed away. This specialty process creates a unique identity and taste into the coffee and once dried the sugars from the mucilage impart a distinctly sweet flavour for the coffee.
I've been loving everything I get from Fire Roasted, and thought I'd take a chance on this one based on the good reviews. I wouldn't recommend it if you lean toward dark roasts like I do - I found it to be overly bright/acidic.

My wife and I both really love this roast. It is just complicated enough that each sip is enjoyable and interesting. I drink my coffee black, but my wife typically uses additives; not with this coffee. It is beautifully vibrant and fruity with a slight apple note to it (to me). One of our favourites.
